This report provides a thorough cost evaluation of the production of coffee via wet processing. The process involves harvesting matured coffee cherries, followed by removal of the skin and the pulp of the fruit using a pulping machine and separating the seeds which is led by fermentation of the seeds using enzymes to remove the remains of the pulp layer over the seed followed by washing and drying the seeds. The parchment layer formed on the seeds after drying are removed mechanically or via polishing led by roasting, thus producing coffee.
