This report contains a detailed cost analysis of refined olive oil from fresh olives. Leaves and branches are removed from harvested olives and turned into a thick paste by milling. Water is added to the thick paste and paste is added to malaxer, where tiny microdroplets of oil fuse together to form large droplets of oil which are easier to extract. The mixture is then passed through a centrifuge to remove water and solid particles from the oil. Finally, the oil is treated with chemicals, heat, and other processes to change the taste, colour, and texture of the oil thus forming refined olive oil.
