This report provides a detailed overview of the production of tartaric acid from grapes. In this method, grapes are processed to produce dregs in solid as well as liquid form. The solid dregs are further subjected to a grinding and fermentation process with the liquid dregs, which produce vinasse. Further, calcium tartrate is extracted from the vinasse and crystalized with potassium bitartrate and calcium chloride. The obtained product is subjected to continuous concentration, discontinuous concentration, and drying to yield tartaric acid.
