Acesulfame potassium, commonly known as Ace-K, is a calorie-free artificial sweetener used in various food and beverage products. It is approximately 200 times sweeter than sucrose, offering a strong sweetening effect without contributing to caloric intake. Ace-K is heat-stable, making it suitable for cooking and baking. It is often combined with other sweeteners like aspartame or sucralose to enhance sweetness and mask any aftertaste.

Chemically, it is a potassium salt of 6-methyl-1,2,3-oxathiazine-4(3H)-one-2,2-dioxide. Ace-K is quickly absorbed by the body and excreted unchanged, contributing to its safety profile. Approved by regulatory agencies such as the FDA, EFSA, and WHO, it is widely used in soft drinks, desserts, dairy products, and oral hygiene products, providing a sweet taste without the associated calories of sugar.

Acesulfame Potassium Production Process

In the first step of this process, fluorosulfonyl isocyanate and potassium hydroxide yield fluorosulfonyl acetoacetic acid amide as an intermediate of the synthesis. From there, potassium hydroxide is used to cyclize the amide and produce an oxathiazinone dioxide ring system from which potassium acetate is extracted, and the final product, acesulfame potassium, is obtained.
