It is chemically hydrophilic (logP ≈ -3.7), and it remains stable at pH 4-7 and ≤25 degree Celsius under dry conditions but hydrolyses in strong acids/bases. It decomposes above 200 degree Celsius, and degrades enzymatically by carnosinases in vivo.
