Frequently Asked Questions

The indicative CAPEX range for butter oil is USD 3 million to USD 8 million (for a 5,000 to 15,000 MT/year facility; driven by cream separation, centrifugation, and vacuum drying equipment).
The benchmark plant capacity is 5,000 to 15,000 MT per year, consuming about 12,500 to 45,000 MT of cream at 40% fat content.
The global butter oil market currently has a valuation of approximately USD 3.0 billion to USD 3.5 billion. The market is expected to reach around USD 5.0 billion to USD 6.0 billion by the early 2030s. It is growing at a CAGR of about 8 to 10%.
The main end-use segments include bakery and confectionery products (~35-40% of demand), driven by applications in croissants, pastries, biscuits, and chocolate coatings. Recombined dairy products (~20-25%), including reconstituted milk, cream, and ice cream. Infant nutrition and specialty food products (~15-20%), particularly infant formula, follow-on milk, and clinical nutrition. Ice cream, sauces, and other processed food applications account for the remaining ~10-15% of demand, supported by use in ready meals, catering products, and other processed foods.
The process starts with centrifugal separation of milk fat from cream. Fresh cream is pasteurized at around 72-85 degree Celsius and passed through a centrifuge to increase its fat content to about 75%. Mechanical working then breaks the fat globule membranes and causes phase inversion, releasing the free oil. A high-speed centrifuge further removes non-fat components, increasing the fat content to above 99%. The oil is heated to around 90-95 degree Celsius in a plate heat exchanger and treated under vacuum to reduce moisture to below 0.1%. It is then cooled using scraped-surface heat exchangers and filled into drums or bulk tanks.
Key ingredients include fresh cow’s milk cream (35 to 40% fat content), unsalted butter (80%+ fat), food-grade nitrogen gas, citric acid or sodium hydroxide, and packaging materials. The cost of cream or butter feedstock constitutes 80 to 88% of total variable cost.
Core process equipment (cream separators, centrifuges, plate heat exchangers, and vacuum dryers) makes up the largest CAPEX component, representing 35 to 45% of the total butter oil plant setup cost.
Manufacturing costs are most significantly driven by the cost of cream or butter feedstock, which typically constitutes 80 to 88% of total variable cost.
Major butter oil-producing regions include New Zealand, the European Union, the United States, Australia, and India. Europe contributes around 30-35% of global butter oil market revenue, while Asia-Pacific accounts for approximately 30-40% due to strong dairy production in New Zealand and India. North America holds around 15-20% of the market.
Butter oil is available as anhydrous milk fat (AMF), anhydrous butter oil, and ghee. AMF and butter oil generally contain a minimum of 99.8% milk fat, with maximum moisture of 0.1% and free fatty acids around 0.3%. Ghee typically contains 99-99.5% milk fat and is used in food applications.
Food safety certifications include FSSC 22000, HACCP, halal, and kosher as applicable. The product is standardized to a minimum of 99.8% milk fat content as specified by the Codex Alimentarius (CODEX STAN 280).
