Eggs: Definition

The egg has a solid-shelled generative body that is produced by a bird. A large portion of eggs laid by domestically raised fowl, excluding those that are particularly kept separately for hatching, are not inseminated, and are sold primarily for human consumption. This greatly impacts the global egg price trend. Eggs produced in bulk come from chickens, ducks, geese, turkeys, guinea fowl, pigeons, pheasants, and quail.

Duck eggs are eaten as food in various sections of Europe and Asia; similarly, goose eggs are also consumed in several European countries. The physical constituent of the egg consists of the shell and shell membranes, the albumen, or the egg white, which comprises the thick albumen, the outward thin albumen, the internal thin albumen, the chalazae, and the yolk. The whole egg has superior protein content and is a superb source of all vitamins, excluding vitamin C. It also includes vital minerals such as phosphorus and zinc.

The laying flock is kept in a fenced area before their actual time of laying the eggs. This is done so that the birds do not hide their eggs or lay them in a scattered manner. It is important to keep the egg-laying environment clean and dry as it will help to keep the eggs clean.

The cleanliness of the laying environment is also important because muddy, dirty, or damp litter will not just dirty and stain the eggs, but there might be a great chance of them being contaminated with bacteria. If eggs are lost due to contamination, it might impact the overall egg production cost. In addition, there must be a supply of at least four nesting boxes for flocks consisting of 15 hens or less. This helps in limiting the breakage of eggs.

Once the eggs are laid, it is important to gather them at the earliest since the longer they are permitted to reside in the nest, the more they will be dirty, broken or may lose their internal quality. The eggs are collected in simple to clean baskets or containers such as plastic-coated wire baskets or plastic egg flats and are not cooled immediately before they are sent for cleaning. Soon after the eggs are collected, they are washed, as this helps in controlling the probability of any impurity and loss of internal quality.

The eggs are washed at 90 degrees F or higher and a minimum of 20 degrees F, which is higher than the egg temperature, with an appropriate cleaning compound.

Subsequently, after washing, the eggs are dried and then cooled rapidly, and after that, they are stored at a 40-45°F and at 70 per cent comparative humidity. Finally, it is important to grade and sort the eggs before storing and sending them out to the vendors for sale.

Industrial Uses of Eggs

Most of the eggs produced around the world are traded in-shell for consumers to consume in the home in a conventional way or for baking. Farmers have agreements with various vendors to manufacture eggs for further processing and selling them further. There are largely three kinds of egg products, liquid, dried, and frozen, while there are small markets for peeled, hard-boiled, and hard-boiled pickled eggs.

The key egg products are extensively used in the bakery and confectionery trades together with other sectors. Eggs have a high content of nutrients, and integrating them with vegetables, pasta, soups, wheat, and bread balances the nutritional value of the meals. In addition, eggs are used as a thickening and binding agent in various food products like mayonnaise. Egg yolk keeps the liquid in an emulsion by enfolding oil particles, preventing them from joining.

North American region witnessed a surge in the eggs price in recent times. The outspread of extremely infectious bird flu harmed egg-laying healthy poultry chicks and declined the egg supplies in the market. This led the price of eggs to increase, specifically the wholesale price of eggs. Grade A large eggs category suffered the major impact of price rise.

Asia Pacific

The persistent price increases in the farm and poultry operational costs led to a major increase in the prices of eggs at a global level. The local markets in India faced a tremendous hike in the prices of eggs recently. The price hike was a result of the decreasing production of egg-laying hens because of the increasing incidences of avian flu, rise in feed prices, and aggravated weather conditions.
