Frequently Asked Questions

The main segments are meat and poultry, dairy, bakery, and other applications, including seafood and plant-based products. Meat applications account for about 50.2% of demand, dairy 16.5%, bakery 16.4%, and other applications 16.9%.

Transglutaminase is produced through microbial fermentation, mainly using Streptomyces mobaraensis. The enzyme is recovered from the fermentation broth, concentrated by precipitation or membrane processing, purified through steps such as dialysis and chromatography, and finally freeze-dried into a stable powder.

Key inputs include carbon sources such as glucose or corn starch, nitrogen sources such as soybean meal, yeast extract, or corn steep liquor, and mineral salts. Downstream processing uses ammonium sulfate, purification resins, dialysis membranes, and stabilizers such as maltodextrin. The fermentation medium can represent about 30% of total microbial transglutaminase production cost.

The main cost drivers are fermentation-medium raw materials, energy for fermentation, aeration, cooling, sterilization, and freeze-drying, along with purification materials such as chromatography resins and buffers. Raw materials and energy are major contributors to the cash cost of production.

Food-grade production generally requires controlled manufacturing practices such as cGMP and HACCP, with applicable food-enzyme safety and purity requirements. In the US, specific transglutaminase preparations have received FDA “no questions” responses under GRAS notices, subject to stated uses and use levels. In the EU, food enzymes are governed by Regulation (EC) No. 1332/2008 and require safety evaluation and approval for inclusion on the Union list. Tariff rates are country-specific and depend on the applicable customs classification and origin.
