Amylase is basically present in the saliva of some mammals and human beings. It is an enzyme which is further catalysed by starch hydrolysis into polymers that contain glucose unit in them. The production is carried by the process of sunken fermentation of the amylase. It is PH stable, Ca independent, thermo stable and has a great PH profile.

It is also very important in the conversion of sugar into oligosaccharides and has a special protein which helps our body to digest the carbohydrates easily. Most of the amylase in the human body are made from the salivary glands and the pancreas that is found in smaller quantities in the tissues. The amylase acts only on the α-1,4-glycosidic bonds and are a glycoside hydrolase.

There are mainly three types of the amylase enzymes like Alpha-, beta- and gamma-amylase, each act differently and on the different parts of the carbohydrate’s molecules. The alpha amylase with an optimum PH level 5.6-5.8 is found in Humans, Mammals, and microbes, whereas the beta amylase with level of PH 5.4-5.5 is found in microbes and plants and lastly the gamma amylase with PH level 4.0-4.5 is found in animals and plants.

One type of amylase is also used in the dishwasher detergents and clothing and is known as bacillary amylase. It has also its application towards the medical side which is used in the pancreatic enzyme replacement therapy (PERT).

These enzymes purse various applications in end user industries like alcoholic beverages, confectionary and bakery etc. which is hence obtained by the wide range of the bacterial species leading to the growth of the bacterial enzymes requirement. It helps in increasing the quality of the food quality and feed and is enhancing the industry globally.

The hydrolysis of starch products is done by the bacterial amylase. As the Alpha Amylase is well capable of meeting the important safety standards of the food and have the capability to increase the shelf life and bio preservation of the food products and is increasing its demand as because consumers are not satisfied with the artificial preservatives. It also plays a very vital role in the production of the biofuels which is helping the growth of alfa amylase industry on a global scale.
