Cream: Definition

The cream is the yellow-coloured component of milk, which is rich in fat globules. These fat globules rise to the surface naturally if the milk is left to stand. The cream is split automatically using a cream separator in the dairy sector. Homogenization of cream decreases the size of the fat globules, and the subsequent product is less appropriate for whipping. The cream is a dairy commodity containing water, protein, lipids, carbohydrates, vitamins, minerals, and other small constituents.

Several kinds of cream are available in the market and are differentiated by the content of their butterfat and processing methodology, whether heat-treated, whipped or others. The fat content varies between 18 – 55 percent.

Cream Production Process

The most common process used in the dairy sector is the centrifugal separation process. The first step in centrifugal dairy processing is to feed the raw milk, with about 4 percent butterfat content and an unidentified load of particulate matter contaminations. This raw milk is put into a disc stack centrifuge with solid discs, operating at a comparatively slower speed.

The reduced speed allows the milk and fat to remain intact. On the other hand, the solid discs hasten the separation process of the particulate matter impurities from the fluid. In the next step, this “clean” milk proceeds to the purification process, where the butterfat and milk are split. Here the separator runs at a speed which is twice as fast as the clarifier.

The clarifier also has a little distinctive design, with the stack discs perforated with “distribution holes” around their boundary. This results in an exceptionally proficient separation: the butterfat content in the skim milk is generally decreased to only 0.01 percent and 0.05 percent. In comparison, the cream is close to 35 percent to 40 percent butterfat. Lastly, the milk progresses to the standardization stage, where the cream is mixed back into the 0.01 percent skim milk to make whole milk, ½ percent, 2 percent and so forth.
