The vinegar market in China experienced notable price volatility during the fourth quarter, driven primarily by feedstock cost fluctuations. The quarter opened with prices declining as corn, the primary raw material for vinegar production, experienced downward pressure due to favourable harvest conditions and adequate supply availability. This feedstock weakness translated directly into reduced production costs for vinegar manufacturers, enabling downward price adjustments across the market. As the quarter progressed, prices reached their lowest levels before entering a recovery phase that continued through the remainder of the period.

The reversal stemmed from improving feedstock market fundamentals, increased industrial demand, and tightening supply conditions. Downstream consumption from food processing industries remained steady, with demand for pickling, preservation, and condiment applications providing consistent support. The cooking and culinary segment showed stable offtake, while industrial applications, including cleaning products and food processing, maintained regular purchasing patterns.

Trade activity reflected balanced market conditions, with domestic producers meeting local demand adequately while export opportunities remained selective. By quarter's end, prices had recovered from their lows, closing near opening levels as feedstock costs stabilized and production economics normalized. The market demonstrated resilience despite earlier weakness, supported by diverse application requirements across food and industrial sectors.

About Vinegar

Vinegar is the aqueous solution of acetic acid (4-8%) formed by double fermentation – converting simple sugars to ethanol and then ethanol to acetic acid by Acetobacter bacteria. Although acetic acid is responsible for the tart and intense flavours, vinegar also contains trace vitamins, mineral salts, and amino acids.

Many types of vinegar, namely balsamic, malt, and rice, are available depending on the source material used. Vinegar is not only used in cooking but as a medicine, a preservative, and a drink to boost strength and promote wellness.
